Information on maturation

With the skins in order to macerate the red colour and the tannins of the grapes in tanks by overpumping the juice during the fermentation period, temperature between 28 to 32 degrees C, after about two week the young wine is put into wooden casks where the malolactic fermentation takes place. The wine ages for about a year in old wooden casks in order to reach stability for bottling and maturation.
